My eyes were bigger than my stomach.  Couldn't finish the nachos.....  Had to leave room for my drumstick which I will be having in a little while.

 

Ok, I'm really exhausted now, so I think I'm going to sign off for the night.  Had a busy day today, and going out wore me out.

I made BBQ spare ribs, scalloped potatoes and mixed vegetables and a green salad. I usually make a nice dessert on Sunday, but didn't today.

 

My son and DH had store bought Italian Water Ice from the freezer.  I plan in having a few cherry Hershey kisses later on tonight.

@ShowMeWhen I rewarm, I put slices on a pan with a rack on the highest rack which has run a few minutes, so it doesn't increase on me.  It only stays for a second or two. Smiley Happy

@Drythe Here you go...

 

1 1/2 cups almond flour

1/3 cup flaxseed meal

1/4 cup unsweetened almond milk

4 eggs OR substitute 1 cup unsweetened apple sauce

2 tablespoons olive oil

2 teaspoons baking powder

1/2 teaspoon salt (omit if using applesauce)

 

Preheat the oven to 350 degrees.

Mix all ingredients until combined and transfer to prepared loaf pan.

Bake about 40 minutes.  Cool in pan about 10 minutes before transferring.

 

If you use the eggs, you'll get a true almond bread.

If you substitute the applesauce and omit the salt, you'll get more of a sweet bread.

@deepwaterdotter  Almost the same here.  Substitute the salad for spinach and the ribeye steak was done in our air fryer.

Chicken piccata with a side of angel hair pasta and a salad with butter lettuce, tomatoes, cukecumbers, and black olives with homemade vinaigrette dressing.

Thank you for this.   I found an eye round roast on sale last week and threw it in my freezer, I'll fix it on Christmas.   What's nice about it that it's good hot or cold.

 

But this week I am very proud of  myself.     I made a chicken casserole from scratch.   I poached the fresh chicken, making an excellent chicken broth.   Using it, I made my own "cream of chicken soup" for the base of the casserole.   And instead of rice or noodles or just a cracker crumb top, I made mashed potatoes as a topping, then shredded sharp cheddar on top of the potatoes.    There were no leftovers.

 

And now that I've done it once,  I can do it again.

@software.....now you've got my mouth watering.  Love anything with mashed taters, cheddar cheese, and chicken.  Eat a lot of chicken.....
