Eye Of Round Roast

Salad of mixed lettuce and baby greens with Parmesan cheese, balsamic vinaigrette

 

Baked potato with sour cream and chive dressing (for him)

 

After lightly warming slices under the broiler tomorrow, I'll cut the rest in chunks, add chunks of potatoes, carrots onion, and garlic cloves with beef broth and add it to the crock pot.

 

 

Eye Of  Round Roast

 

Eye Of Roast

Salt and Pepper to taste

Kitchen Bouquet

 

Preheat oven to 500 degrees

Trim off fat from roast

Brush Kitchen Bouquet heavily on roast top and bottom

Place on rack in pan lined with foil

Bake at 500 degrees 5 minutes per pound for medium rare.

Turn oven OFF -DO NOT OPEN

Leave in oven for 1 and 1/2 hours.

Ready to slice.

Made a batch of chicken cutlets dipped in flaxseed with a slice of my apple almond bread I made yesterday and a latte.

home-made chicken noodle soup,I made two loafs of bread yesterday,  Christmas cookies ,been baking all day!

KC steakburger and pan fried onions on a bun. 

 

Working around the house, too and this was all I needed after a big slice of homemade banana bread earlier! 🤐

Leftover mongolian beef, a little bit of rice and a large green salad.

@Catiele......your dinner sounds good too.  Now about the drumstick.....just simply adore them.  I have one frequently.  Just a nice size and takes care of the milk situation.  

 

Will be watching Nicole Wallace on MSNBC at 8:00 my time.  I like her a lot.  Usually watch HGTV on Sunday evening.....all the island shows.....

 After someone on these boards asked what to do with phyllo dough the other day and I responded that I would make spanakopita, I was so in the mood for it that I made a 9 x 13 pan of it today, which is what we had for dinner with some champagne and a salad. It reheats beautifully and it looks so pretty  on the table, too. I hadn’t made it for awhile so I was glad that another poster inspired me to think about it and make some. My husband was pretty happy, too.

My youngster and I are going to Five Guys for a burger and fries. We do it every Sunday evening.
