The sharpest cheddar out there - so sharp that it rakes the roof of your mouth and makes your tongue sore. Aged and dry.

I consider cheese one of the basic food groups and like them all. Acc. to a Dr Oz show I watched years ago, the hard cheeses take a certain amount of their calories away while being metabolized, so better for dieters. He recommended Gouda, which is a great cheese.
Still, my favorite isn't a hard cheese: it's handmade fesh mozzarella. Preferably served with fresh basil, a perfect tomato, and 8 yr balsamic vinegar. Maybe a grind of pepper.

I like all cheeses, and look for a small wedge of something "new" to try every week. However......my standard "works with everything" is jalapeno jack. I keep a big block of it at all times.

I rarely eat cheese due to the saturated animal fat in it... but, if I ate it at all I like strong smelly cheeses... Havarti, provalone come to mind. IF I do treat myself to cheese, I will choose a lower fat variety, Mozzerella, Parmesan, or a fat free variety. The taste in the fat free is not as good, but it beats ingesting a ton of heart clogging fat.
