Starting this in Chat because IMO it has a broader appeal than just for Kitchen Forum peeps.

I'm lucky to live in an area that has just about every type of ethnic cuisine available in the US, and I was started at a young age to try new things.

My favorites are Thai, Indian, Persian, and Malaysian/Indonesian. I enjoy German, French, Turkish and Lebanese, and have even had Bosnian and Serbian dishes as well as Nepalese.

I'm not specifically listing Mexican, Chinese or Italian as these are foods so common most people think of them as American ;-)

What do you like?

I like lots of ethnic cuisine, but due to food allergies/celiac, there are ones that I find "friendlier" when eating out.

My favorites would be Thai, Spanish, Asian Fusion (probably more Japanese than Chinese).

Wow, you are lucky, Moonchilde!  I live in a small town where Mexican and Chinese are considered the exotics. LOL.  I'm a big fan of Greek food.  I like a good curry, and I have enjoyed what I have tried of Thai, though I haven't had much chance to dip my toe into the water.  Finding more exotic sauces in the grocery stores lately so I will probably have to get brave and make my own.

I think maybe the only Spanish food I've eaten is paella. There are tapas places around me but I've never gone. I'm game, though.

I haven't had the opportunity to try Portugese except for pastries - but the best spring rolls I've ever had were made by a Chinese-Portugese woman from Macau.
