Darn!  One day too soon!  We had tacos last night!  Love a good taco.   Here in NJ there are several places that have half-price tacos on Taco Tuesday.  One place, called Taco and Tequila Bar, have the best tacos...several different kinds of tacos to choose from.  Deeee-licious!

I love tacos -- all kinds!  But this is what I had today for dinner.  I call it my Taco Plate.  It has all the fillings of a taco but there is no taco or tortilla:  shredded lettuce, beef with bold taco seasoning, shredded Mexican 4 cheese, taco sauce, avocado, tomatoes, sour cream and pickled Jalapeno slices.  Yum!

I haven't made tacos since having to get creative with my cooking during Covid.  I did soft tacos with a fajita mixture.  Don't think I've had tacos since then either.  I usually get a Tostaguac at the Mexican restaurant which is a similar taste profile with guac added. 

At home, I'll usually do quesadillas.   

Tonight will be spaghetti though.

My neighbor was just telling us about a great Mexican restaurant here, but her complaint was they were closed on Tuesday.

No biggie for me.  I don't have to have a taco on Tuesday.
