Steel cut oatmeal????????

Can someone explain the benefits?? Why is it called "steel cut"?? How does it differ from regular oatmeal and how is regular oatmeal processed?? Sooooo many questions! LOL

I've heard of this type of oatmeal before but never really thought about it until I read the oatmeal thread this morning.
