If you had the chance to spend a day with a celebrity who would you chose and what would you like to do?
A celebrity would be someone that everyone has heard of

I'd go driving with NASCAR's Jimmie Johnson. I met him in 2014 at a race
and he was kind enough to talk to our kids and sign some NASCAR stuff.
Very nice guy.

Funny you should ask. Before all of the news about Bill Cosby became public, I used to think I'd want to spend a day with him. I found him to be intelligent and kind, as well as witty of course. I thought he made sense in many of the things he said about people and the way we behave. I really looked up to him and thought he was such a good example of what a man should be. He seemed like a good role model for our younger generation.
I was so deeply saddened and disappointed in him when I found out just what kind of an egotistical monster he really is. He really had me fooled.
I'm not sure there is any celebrity I'd care to spend the day with.

Jimmie Johnson was always my favorite driver. So cool that you spent time with him. I'm glad to hear he was kind to you and your family. There's nothing worse than a "celebrity" who's too big for his britches.

Interesting and honest comment.
It's common for many people in the public eye to develop a "public personna". I'm not referring to just people in the entertainment industry.
It gives them a shield when sometimes caught off guard in public. Often, a publicist helps with creating a personna when the career reaches that level.
I also think people make a mistake assuming that everyone in the public eye should be corralled into being a "role model" whether they want the job or not. Obviously, Cosby was a very unusual example, but he did what he did because it served him to do so, and hid the predator beneath the surface.
As for what "celebrity" I'd want to spend a day with .... I can't think of anyone, but I'd LOVE to have dinner with Martha Stewart or Ina Garten. Or perhaps Bobby Flay. Having dinner and talking about food seems like a fun evening.
