When playing the piano, I am reading the music even when my left hand does different notes from my right hand. It's easy for me (long time pianist), but how does that work???????

The "different notes" are only in registration -- where you are playing on the piano. The pianist's different clefs only accommodate registration.
I do not know if there was a discussion about R brain/L brain. As a musician, I think you are utilizing your entire brain. If there was ever an instance of engaging the entire body, mind & spirit in an endeavor, it is one of the playing musician.
L brain - analytical & methodical in thinking
R brain - creative & artistic
As pianists, how we interpret the music, we are creative.
How we read the notes and understand the practices of the musical period of the composer, we are analytical.
