Even if you didn't do anything online, or use debit/credit cards, or any other electronic means, the companies that you do business with have online information about you. That is also stored and collected in main databases. So using even that information can be gathered about you. Information sharing and data technology is a big business. All companies are looking for profiles about core customers. They are not very much interested on your name...just your statistics. It's crazy.
