@Yahooey : Use the ingredients that you prefer. Let me go look for my recipe. I think that I purchased the candid pineapple,cherries.. I don't do the booze in drinking or baking .But have enjoyed a strawberry drink on vacation.

@Yahooey      Lizzies: Fruit Cake Cookies

1/2 recipe = 17 Dozen. Recipe of friends Mother that lived next door to us growing .

1 pound of candied cherries

1 pound of candied pineapple

1/2 pound of dark raisins

1/2 pound of white raisins

3    cups of chopped pecans

1/2 stick of butter

3/4  cup of dark brown sugar

2    Eggs

1/2  Cup of pineapple juice

1 1/2 Tablespoon Milk

1 1/2 Teaspoon of Soda

2 1/2 to 3 Cups Flour ( Plus 1 Cup to Dredge Fruit)

1/2  Teaspoon of Cinnamon

1/2  Teaspoon of Allspice

1/2  Teaspoon of Nutmeg

1/2.  Teaspoon of Cloves

Cut fruit into small pieces, Chop Pecans, Add : raisins: dredge this in one cup of flour.

Cream butter and sugar. Add Eggs : one at a time. Add the pineapple juice, milk and dry ingredients. Add fruit and nuts.Mix well so fruit is mixed in.

Drop from teaspoon onto greased cookie sheet. Bake at 275 degrees in preheated oven for 12 minutes. Cool on rack. Store in air tight container, lined with wax paper. Enjoy. Makes 17 dozen cookies.

i had to bring up the calculator 204 cookies

 

that is crazy - 1/2 recipe - who would ever need a full recipe

 

@SouthernBee yikes -

 

have u made 204 cookies

 

i probably have made that many cookies but it would b emany different types

@Yahooey : Yes, my first friend at my new church, needed a lot of cookies for her family coming home for Christmas from several different states. We purchased the Christmas cookie tins and filled them all up. Her family really appreciate and enjoyed them. Plus at that time, had only one oven.

very low in fat - 1/2 stick butter

for over 200 cookies

 

some recipes - which are delicious - but calls for 2 sticks and it is nowhere close to 200 or 100 cookies - or 50 for that matter lol

 

cake or cookies..... 

 

i would serve this after christmas

we are going to foodie niece for dinner and i'm not bringing fruitcake

 

i experiment with brothers fam - but wouldnt at her dinner

maybe if we get together in jan 

 

if i make cookies - i can share w/o it being a dessert - 

know what i mean jellybean?

 

when was the last time u made them?

it does sound delish

i just did the math - if i halved the recipe -

still 102 cookies

 

do they spread a lot?

 

are they tiny cookies

i see the portion as 1 tsp

i think my small cookie scoop is more than 1 tsp

 

i would sub the raisins for cranberreis and candied ginger

@Yahooey : They are good.I understand what you are saying.

I think that I made them 4 years ago. No one to help me. The night before: got all my equipment out and washed everything. Had several cookie sheets and put parchment paper on them. Thankfully had the double wall oven .I pre- measured all the dry ingredients, chopped the pecans. Prepared all of my cookie tins.

The next morning , decided to eat a big breakfast because long day. Had everything ready and just started.

If I make them again, will need some help.

@Yahooey: I don't think they spread very much because the mixture is somewhat thick and oven temperature not really hot. I think the cookie size is about small/ medium, wish I had taken photos.

Cranberries and candied ginger sounds delicious.

i think i would use my scooper if i were to make them & whatever size they are will be

 

i also only bake. 1 sheet tray at a time and i understand that when it is baking day

a lot of standing - scooping - waiting and trasfter to cooling rack etc

 

double trays in the 1 oven - never really worked or i get nervous if not baked enough etc - i dont have a convection oven

 

a very long day 

 

i tend to make dough ahead of time 

a day of dough

a day of baking

many days of eating
