@cowboy sam : Mandarin Orange Cake
1- pkg. Yellow butter cake mix
4- eggs
3/4 cup oil- I use canola
1- can Mandarin oranges
1- (8 oz) Cool Whip thawed
1- (20 oz) can crushed pineapple with juice
1- small pkg. Instant vanilla pudding mix
Preheat oven to 350 degrees.
9x13 pan spray with Bakers Joy
In a large mixing : Combine cake mix, eggs, oil and Mandarin oranges with juice. Beat until smooth. Pour in prepared pan. Bake 35 to 40 minutes or until a tooth pick inserted in the center of the cake comes out clean.
To make the topping: In a large bowl mix together the pineapple with juice and the dry pudding mix. Mix well. Fold in the Cool whip until blended. Spread on cake. Keep cake in refrigerator. Easy for me because bake in pan and don't make 3 layers. I don't make this often because this is something that I can't eat just one piece. Just saying.....

@Bri369 : The mandarin orange cake also called pig pikin cake. Several different versions on the internet. The recipe that I shared is what I changed. Some recipes call for a cup of oil. Some recipes just dumps the pineapple, pudding mix and cool whip together and mix. For me - the pudding mix blends better with the pineapple and then fold in the cool whip.
