@Yahooey : Good Morning. Nope- can't do it. What's up for today? I was real nice and let DH watch the Thursday night football on my Amazon tablet and he liked it because the screen is a little longer.

Okay, here's the recipe for this delicious healthy Soup...

 

You can use Chicken, Beef or Turkey for the meatballs, whatever your preference....I use Chicken.

 

Chicken Meatball/Escarole/Carrot Soup...

 

3 large Carrots, chopped...

10 cups Chicken Broth...

1 medium head of Escarole, washed and cut into bite size pieces (not too small)...

1 pound Ground Chicken...

1 small Onion, minced...

2 large Eggs, beaten...

1/2 cup Bread Crumbs ( I use Italian)...

1/2 cup freshly grated Parmigiano-Reggiano Cheese, plus more for serving

1/4 tsp. ground pepper...

 

 

In a large slow cooker, combine the Carrots and Broth...

Stir in the Escarole..

.

Cover and cook on Low for 4 hours...

 

In medium bowl, combine the Chicken, Onion, Eggs, Bread Crumbs, Cheese and Pepper...Mix well and shape into 1 inch meatballs...

 

Carefully place the Meatballs into the soup...

 

Cover and Cook for 4 hours more or until Meatballs are cooked through...

 

Serve and sprinkle with additional grated cheese....

Good Morning Everyone!

 

Yesterday turned out to be a beautiful Fall day and same for today....I'm still having a hard time posting images...We just had our Modem "updated" about a week ago to supposedly improve computer efficiency...so far it appears that the "outdated" Modem was much  better!...Doncha just love it!   Smiley LOL

While walking last night we had a few sprinkles  and  just did a short walk...saw another new  decorated house across the street   we walk but   didn't cross the street to check it out  as we needed to get home   because it was nippy and drizzling rain  but when we got back to our street it had stopped!

 

So now we have 3 decorated yards with Halloween decorations  but we need to check out a nearby small subdivision  to see if anyone has anything in their yards.

Frost over night  do ya need to cover any flowers,etc?

Nothing for me to cover..all flowers are done and done for the year!
