HEE @PamfromCT  the only true things about that picture is the grey hair and the over abundance of brussels sprouts but I thank you my friend! . . . Smiley Very Happy

me been watching videos and recipes bc last night i bought a whole duck

did i ever cook duck before - NO

do i even own a roasting pan - NO

i have eaten duck and lubs it

this is in place of the cornish game hens bc they wanted 5-7 a piece and i would need 6 hens

 

i have a ham also which i have done in the past

in the style of mtc HEE - i always try new recipes at family gatherings

people always say - do tried and true and the dinner will be sucessful

 

my motto is - how will i try new recipes for just me and Zoe?

there is always other stuff to eat and why didn't u cook something? HA

 

i will be making ham - iffy duck - meyer lemon tart (maybe pumpkin cheesecake too)

brother is making - baked pasta (cuz his son wont eat anything else) - spanakopita (cuz his daughter is pescatarian) mashed potatoes 

 

if any of u have cooked duck - drop me a clue

No . . . oh gosh no . . . I am not a great cook at all but I also have not given myself any food borne ailments so I consider that a win! Smiley Wink

 

Yahooey, this is a link to Maple Leaf Farms which has delicious prepared duck offerings and gosh they are good.  I used to buy them from Costco all the time for my mom.  You can literally take them out of the packaging, plop it in the microwave (or slowly heat up in a skillet) and a few minutes later you have a delicious meal:

I remember when we lived in Germany we went to a tiny town in the Bavarian Alps called Garmisch one Christmas.  We ate Christmas Day lunch at our hotel and they served Christmas Goose.  I thought it sounded so fancy.  Then later that day we walked to McDs and got Big Macs. Smiley LOL

i have watched many videos and 1 of them was from Maple Leaf Farms

i doing a mashup of 2 recipes i found - very similar techniques but with a different flavor profile

 

it will be a 3 day process - broken up so it will be easier for me on thurs

one of the concerns is the splattering of oil from the duck

many recipes states to turn the bird and drain the oil from cavity and pan

so the oil doesnt keep collecting - hence the splattering

 

me no like splattering which is why yahooey doesnt fry foods

although she lubs fried foods and no - she does ot own an air fryer

apologies - i digress

 

tues - i will dry rub the duck and poke holes on the skin all over and let dry in the fridge overnite - this will dry out the skin for crispiness later on - me hopes

 

wed - steam the bird so the skin becomes taut and parcooks the bird

         after cools to room temp - rub with wet marinade and into fridge 

 

thurs - roast duck - and no one dies

 

i believe in writing down lists (shopping) and notations - this is complicated and i'm hoping it will be a wise choice - wings and paws crossed

did u like on WED - i put down eau instead of water - couldnt abreviate and it would fit - (french for water) - HEE

forgo the ganache- there was enough nutella frosting

it was very moist and enjoyed by all - sprinkle chopped hazelnutrs in the middle and on top - the nutella didnt make it overwheming chocolate - they played nicely together

Hello Lovelies,

I am sure you all are very busy getting ready for the big day.  I remember doing that for so many years, and the excitement and happiness of Thanksgiving in our home.  We will be going to DD and SIL’s place, and his dad will be there.  I will be bringing a few things, but they both like to cook and will have way too much food.  

 

My SIL has arranged for a “stair glide” to be put into his dad’s place, as he has a second floor in his home.  Dad loves his home and his adored little doggy.  

 

This is has been kind of a tough year for many of us, but we are here to celebrate.  Always so much to be thankful for.  And I do wish you and yours a most Happy Thanksgiving.
