I remember doing this for my Dad's 91st birthday. You have months to finalize things so relax. It would be good to let those who will be invited know and get RSVPs so you know how to plan the menu.

Send a "Save the Date" card or ecard now.

I would send the Save the Date notices since you have the date and the actual invitation soon afterward. For a wedding it's usually 6-8 months for save the date and then 6-8 weeks for the invitation. You mentioned many guests would be coming from out of state, they would need to make travel and hotel accomodations. The closer to Thanksgiving, the more difficult (and expensive) it will be. Give them as much time as possible. I would be weary of sending any invite via mail because of how bad USPS has been (at least where I live). Our water company just received a check we wrote months ago. I received tax papers a couple of weeks ago.
