How do you keep potatoes from sprouting eyes or rotting?

However, like @Mominohio, I stock my house very well, and do my best to avoid big grocery store shopping trips during flu season.
Right now I am in stock mode filling pantry shelves, and freezers. I usually only go to the grocery store 1-2x a month, and always buy extra. 6 days before Christmas, I do my last food shopping for the year, and then I’m good until the end of March. I am never the person who races to the store before a snowstorm. Right now I have 50 lbs of potatoes and 50 lbs of onions in my garage.
Are you in the mountains? I’ve got relatives who live in WV and they stockpile for winter. I remember visiting once and seeing huge bags in the storage area. “Old timers” always said they never went down the mountain in the winter.

My potatoes are laid out, not touching, on plastic stackable bread trays in the coldest, darkest corner of the garage. Potatoes sprout because of moisture and light, which doesn’t happen in our garage. The onions are also on the same type of plastic trays on the opposite side of the garage.

No, I do not live in a mountainous area of the state. I can get out easily in bad weather, and we have 4WD vehicles, I just don’t like to go out in cold weather, or do big shopping trips during flu season.
I’ve just found a smarter way to shop that saves me time, money, and a lot less hassle with tasks I hate to do.

@RedTop I think that’s my problem. I didn’t lay them out and it’s hard to find a dark corner. There are windows in the garage door and it is filled with so many tools etc. I am going to try again.

Same for the two of us and I'm determined to get that way down. Wish me luck.
@Bridgegal Good luck with that! I need to bring our costs down too but it's difficult with the holidays coming up....I'll try in the new year! ![]()
