I love Oatmeal...Have you ever tried Baked Oatmeal?...I have a great Baked Blueberry Oatmeal recipe to share...Delicious!

 

 

          8x 8 baking dish...spray with cooking oil....Preheat Oven to 375

 

          2 ripe Banannas....approximately 2-1/2 cups of Blueberries...

 

          Cut banannas into 1/2" slices and place in bottom of   

          baking  dish.....cover with most of Blueberries...(saving a small

          amount for top of Oatmeal mixture...

           

 

           In medium bowl, mix....

 

            2 cups Oats

            1 tsp. Baking Powder

            1-1/2 tsps. Cinnamon

 

             Add evenly over Banannas and Blueberries....

 

 

              In bowl...Beat....

 

               2 cups of Milk

              1 large Egg...beaten...

              1 tblsp. Unsalted Butter...melted

              1/4 cup Maple Syrup....

 

               Pour mixture evenly over Oats....gently rap pan on counter so milk

               also seeps through Oats to bottom...

 

               Add remaining Blueberries on top...(I also sprinkle just a small

               amount of miniature dark chocolate chips on top)

 

                Bake approximately 35 minutes (until top is golden brown and

                Oatmeal is set....

 

 

                 Voila'...I also like to add a scoop of greek yogurt on top.

@songbird, as others have pointed out, your number is way off. It's approximately 150 calories per serving -- I eat less than a normal serving). With my two or three sliced of banana, a tablespoon at most of walnut pieces, a dribble of maple syrup (essential, IMO), and just enough fat-freemilk (we use *Fairlife), I estimate my portion at the very most about 250.

It may make you feel more full at first, but it burns off quickly for me and I am hungry again in a couple of hours.

 

I eat it sparingly.  I do much better with protein for breakfast.  


@Ms tyrion2, I usually go more for protein in the morning, too. If I don't and then I do my power walk, I can start to get that low blood sugar feel.

 

But I do like to have oatmeal once in a while in the winter.

@songbird, maybe that's why you were so off in its caloric intake.

@suzyQ3 @Ms tyrion2...I need a combination of both a complex carb and protein which is why I add some greek yogurt on top of my oatmeal when I have it...It is a good healthy balance for my metabolism.

That's one reason why I add both hemp seed and walnuts.  It jacks up the protein and it also adds omega 3's..  If I only have berries and/or banana on the oatmeal I just crash soon afterwards.
