Funny--my SIL and I were just discussing fried chicken yesterday-her mom made really good chicken and I can't remember eating fried chicken growing up. I can't make it to save my soul, but would certainly eat a plateful!!!Woman Tongue

Use Ky colonel flour comes in that small red box with what looks like Col. Sanders on the box, but, it's not a

KFC product.

 

Secret is put a tablespoon of butter in your grease.

I use Crisco gives it more of a yellow golden crisp

texture.

 

Don't put butter in a deep fryer ! I'm talking about

in a skillet .

@SharkE   I always use some butter for flavor when frying chicken....usually half crisco and half butter...no oil.  I agree, butter is a secret weapon.

 

I have 40 lbs of chicken wings in my freezer  that I need to fry for a graduation party on Sunday.

 

I am also making 3 dozen of deviled eggs and 3 dozen of red beat eggs.

 

I am gonna be chickened out.

Here's the recipe for KFC cole slaw:

 

KFC COLE SLAW

 

8 cups finely chopped cabbage (or use pre-packaged shredded cabbage)

 

1/4 cup finely chopped carrot (1 medium carrot)

 

2 Tablespoons finely minced onion

 

1/3 cup sugar

 

1/2 teaspoon salt

 

1/8 teaspoon pepper

 

1/4 cup milk

 

1/2 cup Mayo

 

1/4 cup Buttermilk

 

1 1/2 Tablespoons white vinegar

 

2 1/2 Tablespoons lemon juice

 

Be sure cabbage/carrot/onion is finely minced (like grain of rice).

 

Combine other ingredients (not cabbage/carrot/onion) & mix well.

 

Add cabbage/carrot/onion to the wet mixture & mix well.

 

Refrigerate for 2 hours before serving.

 

Serves 8.

 

(If you're a Miracle Whip person, feel free to substitute, but KFC uses mayo)

KFC cole slaw is the source of a family story for us.

My mother in law isn't know for labeling things and so her fridge sometimes holds mystery items.

One day, my husband, his brother and dad were hungry after working around the ranch and went in to eat lunch.

Scrounging up whatever, they found a carton of KFC cole slaw in the back and dug in.

My brother in law and father in law were enjoying it so my husband decided to grab some before it was gone.

He took one bite and spit it out.

Then made a face and said there was something VERY wrong with it.

The other guys were saying, "what?!" Happily chewing away.

My mother in law comes in and sees what was going on and calmly (not so much) told them it was very old and being kept in the back because it was for their chickens as a treat.

Whenever KFC comes up everyone gets a "look" on their faces.

My late mom used to make the best fried chicken, always came out crispy golden brown. Mine never came out the same as her's even though I followed every step, now I just resort to Shake 'n Bake or take out fried chicken.

I love some good fried chicken!  My mom fried chicken in a big iron skillet and it was amazing.  There are some good restaurants that we like but I haven't had fried chicken since last August when I started eating healthy.  Now I'll be thinking about fried chicken and potato salad all day.
