Irshgrl31201 - Gingerbread Cookie Recipe

I wasn't sure if you would see it in the Holiday Cookies thread, so I decided to start a new thread. These cookies stay soft after baking. Hope you enjoy it!

Gingerbread-Men Cookies

2 1/4 cups flour

1/2 cup sugar

1/2 cup shortening (i.e. Crisco solid shortening)

1/2 cup light molasses

1 egg

1 1/2 tsp. cinnamon

1 tsp. baking powder

1 tsp. powdered ginger

1 tsp. ground cloves

1/2 tsp. nutmeg

1/2 tsp. baking soda

1/2 tsp. salt

Preheat oven to 350 degrees. Into large bowl, measure all ingredients. With mixer at medium speed, beat ingredients until well mixed. Cover and refrigerate 1 hour. On lightly floured surface, with floured rolling pin, roll dough 1/8" thick. With cutters, cut out gingerbread men (or other desired shapes). Place cutouts 1/2" apart on cookie sheets. Reroll trimmings and cut. Bake 8 minutes or until browned. With pancake turner, remove cookies to racks.
