Wow!

I have done this with tomatoes and peaches..it never occurred to do it with potatoes!

So I have to ask because I can't tell from the video. Are the raw, unpeeled potatoes just dipped in the boiling water and then dumped in the ice bath? Or are the potatoes cooked first, then dumped in the ice bath?

I know the boiling water trick to peel tomatoes, but I wouldn't be cooking them first or after either.

I've made potato salad both ways: peeling the potato first, dicing it and cooking; boiling unpeeled whole potatoes, letting them cool off and then peel and dice.

Color me completely confused at this point and no Idaho potatoes at home to experiment with-

<h2>Steps</h2>
  1. Step 1
    <h4>Cut the potato skin</h4>

    Make a cut all around the potato, lengthwise. Try to slice only the skin, not the actual potato.

  2. Step 2
    <h4>Boil it</h4>

    Put the potato in a pot of boiling water. Boil until it is soft inside

  3. Step 3
    <h4>Cool it off</h4>

    Plunge the potato in ice water for 10 seconds. The surface of the potato will shrink, while the center remains hot.

  4. Step 4
    <h4>Remove the skin</h4>

    Rub the potato with both hands and watch the skin fall right off.

I use this method all the time for sweet potatoes. I cook them 3/4 done, slip the skins off and candy them for a holiday dinner. White potatoes would be okay for frying if you cooked them only enough to loosen the skin. I would NOT want to try to mash any this way though. I like my mashed potatoes light and fluffy. My mother used to do white potatoes this way for her hot potato salad.

Hmm I found this too for boiled eggs:

I also use this concept to peel boiled eggs. Pour the boiling water off of the eggs and rattle the eggs until they crack. Fill the pot of boiled cracked eggs with cold water and let stand for several seconds. The shell will slide right off.

The potatoes are cooked in their skins then dumped in the ice bath then the skins come off by squeezing them at the ends

Croemer, to make hard boiled eggs easier to peel I do essentially what you posted minus the cracking of the egg shells. I boil them, dump the water out and then let very cold water run over them. Once the pan has cooled from the water, I let the eggs sit in cold water for several minutes. I take them out, dry them off, put them in a container and into the fridge they go. Once cold, they peel quite easily.

I have to wait until the eggs are completely chilled-I make a mess if they are warm or still too hot to handle.
