I remember bullseye eggs. I also like basic egg sandwiches: Buttery fried or scrambled eggs between slices of toasted bread. With or without ham or bacon. Or cheese.
These use to be called boy scout eggs,in the 50's and 60's.
i still make these......i call them toad in a hole OR egg in a hole.

I ate eggs for years - made really good egg burritos!! Then about ten yeas ago, the idea of eating eggs made me gag! I cannot look at or even consider eating eggs now!!
I keep thinking that I should at least try them again - since they are fairly good for the body. And even bought a carton of six last year. But I ended up throwing them out...just cannot get past the image of me eating an egg! My family thinks it is nutty, but respect my choice!!

Well I used to like them over light (like sunny side up but flipped over once for those who dont know). Now I eat scrambled only (see below)
(And I used to eat only 2 a week because I used to be allergic to eggs and it worried me).
But anyway, now I only eat scrambled because my vegan granddaughter (who doesnt eat eggs at all) turned my stomach with vegan videos! So when I would dip the over light with my toast and the yelllow would come out, I would think of the videos! So I still eat eggs but maybe only once every other week anymore!

I haven't eaten eggs, in years. I just lost the taste for them. (Although, I do use them in baking).
When I ate them I liked egg salad, and sometimes, fried, over easy. Never liked scrambled.

If i go out to eat like breakfast I order scramble with a little salsa on top. At home my son brought me one I can put in the microwave. You put a little water in the hole, crack the egg on top and in a bout it's done. Then I put it on bread with mustard, mayo and cheese.
