It's a nice idea to put the bread in a square pan. I think it would kept it moist longer than a loaf pan. I can almost smell it. I looks delicious

@cherry  I make this recipe for Banana Nut Bread cookies, is it anything like the one you make?

 

1/2 cup butter

1/2 cup shortening

1/2 cup light brown sugar

1/2 cup white sugar

2 eggs

1 tsp vanilla

2 mashed bananas

2 1/4 cups flour

1 1/2 tsp baking powder

1/2 tsp salt

1/2 cup chopped walnuts

 

Cream butter, shortening, and sugars in bowl until smooth.  Beat in eggs, vanilla, and bananas.  Mix flour, baking soda, and salt in another bowl, then blend into butter/sugar mixture.  Mix in nuts.  Drop by tablespoons onto greased baking sheet, and bake 10-15 minutes at 350 degrees until lightly browned.

Sounds identical, I always use a bit more vanilla, because I like it

I've never added extra butter so I can't say with any authority, but I suspect they would burn more easily.
