Fun poll, @mare54 -- and Happy Thanksgiving to you too.  We always said pancakes, but as a child, whenever we would travel, and I saw "hotcakes" on the menu, I thought they sounded so much more exotic and tantalizing....

And you need the term "hotcakes" for the expression that goes   "They went like hotcakes",  or "They sold like hotcakes",  meaning whatever "they" was, it was very popular!

Re: Hotcakes vs Pancakes

[ Edited ]

My understanding is that the old fashion Hot cake  was  made with out  egg and baking powder . It was made with milk, flour, baking soda and  oil/butter.  A French  relative told me this when I was learning to cook as a child  . Hot cakes are not fluffy & airy like the French " Pancake" which has eggs, and baking powder along with milk, flour , oil/butter and baking soda

Pennsylvania native here... we always called them pancakes.

Speaking of such, when I was young my mother always used Aunt Jemima syrup and I always thought it was maple syrup.  When I grew up and tasted real maple syrup I was shocked at the difference.

Now even though I live on the west coast I purchase my maple syrup from a farm in Shoreham, VT.   I order it on-line.

Even though I can find maple syrup here in my area it's not real Vermont maple syrup.

I'm envious of those who grew up in the New England area and enjoyed real maple syrup from childhood.

Pancakes........Although many, many, many years ago, when I was a child, and we drove through a few states, I recall the various diners/cafes calling them hotcakes.

I can actually smell the delicious aroma of pancakes/hotcakes topped with maple syrup right now......

I say pancakes and I love 'em! I only eat them once or twice a year...I savor every bite. Blueberry are my favorite but I wouldn't turn my nose up at plain old buttermilk.
