We enjoyed the pumpkin bars last night! I made them just for us since we are going away for Thanksgiving dinner and I'm taking pies for them. The bars are really, really good. You can't tell the bar has vanilla pudding in them because you add cool whip to the pudding and it sets up very nice. Toasting the peacans is a must, don't skip that step.
