Help! Rehearsal dinner toast or not??

We are hosting a rehearsal dinner for our son and future daughter-in-law. I had planned on having champagne or something similar to toast them with. When I called to talk to the manager about ordering champagne or etc. she said they do a lot of rehearsal dinners, and they never choose to toast, as it spoils the toast for the following day. I am confused! Haven't been to a wedding rehearsal in quite a few years, if you have been, did they toast??
