Don't care for eggnog but DH loves it. When Mom was w/us her retirement community would have a tree trimming party for the people living there and they always served eggnog. Mom just loved that party.

I bought it Thanksgiving week at the request of my son. It was as thick as heavy cream...yuck! I don't enjoy eggnog as much as I used to. I don't mind the taste but it's too heavy and I'd rather get my empty calories elsewhere, like Christmas cookies Wink

Yuck; I'm surprised people still drink that. Oh, wait, now I remember, they doctor it up with booze. I still say Yuck. Good booze shouldn't be contaminated with dairy.

I found this recipe for Eggnog French Toast. Although I don't like eggnog straight from the bottle I just might like this. Can you get eggnog in pint size? If so, I may have to try this recipe with some tweaking. Does 1 1/2 Tbsp. cinnamon sound like a lot to you? It does to me. I think I'd also use more than 2 eggs.

Ingredients:

2 eggs, beaten slightly

1 1/2 cups eggnog

1 1/2 tbsp. ground cinnamon

1 teas. pumpkin spice

12 slices French bread

Directions:

  1. Whisk the eggs. eggnog, cinnamon, and pumpkin pie spice together in a mixing bowl until well blended. Pour the mixture into a shallow dish.
  2. Preheat an electric skillet to 300 degrees F (150 degrees C). Lightly grease the skillet.
  3. Dip one slice of bread at a time into the eggnog mixture, being sure to coat each side of the bread thoroughly.
  4. Place the prepared bread slices into the preheated skillet, and cook, turning once, until golden brown on each side. Place cooked slices on a serving plate and cover with foil to keep warm until all French toast is cooked. Serve immediately.

Hi Anika, Hope you had a lovely Thanksgiving and are doing well. Regarding your question about your recipe, I don't think 2 eggs is enough and 1 1/2 Tbsp of cinnamon sounds like quite bit, especially since there is cinnamon in the pumpkin pie spice. I have a recipe I use that makes 8-10 servings and calls for 8 eggs, so even when I halve it I'm using 4 eggs. Even though you don't care for eggnog drinking it straight, I bet you would like the french toast. I'm not sure if you can find it in pint size, the smallest I've seen is the 1QT size. Here's my recipe for Eggnog French Toast, it's certainly something you can make to your liking, it's hard to mess up.

8 eggs

2 cups Eggnog

1/4 sugar

2 tsp cinnamon

1 tsp Vanilla or Rum extract

20 to 26 slices of English muffin bread (any thicker, more dense bread can be used)

Of course, mix the ingredients and prepare like in your recipe.

Serves 8 - 10

This is also really good when made with croissants. Smile
