Half the family wants ham and half wants a turkey so i am making ham & sweet potato casserole and a pineapple custard - cousin is making a turkey breast and stuffing. Others are bringing dessert and veggies and appetizers. Everyone brings what they wish to drink. We will set it up as a buffet. Keep it casual. We eat on paper plates and everyone takes home their own dirty dishes that they brought with them - so no huge cleanup for the hostess. We have been doing it this way for 4 years now and it works out great. All the turkey and ham get all eaten every year - we are feeding a lot of teenagers and they really pack away the food.
I am making a prime rib for just 3 of us on Christmas eve before church. I put it in our Ron Popiel rotisserie and it comes out so delicious - crispy on the outside and medium to well done on the inside. I serve it with au gratin potatoes and carrots in an orange/honey glaze.

It is the easiest thing ever. I did my first one on Christmas Eve and I was terrified because my first try was on prime rib that cost over $100. I put it in a hot oven for an hour and then turned it off and let it sit in oven for one hour without peeking and it was PERFECT. I "think" I'm getting a digital thermometer for Christmas . . . silly husband . . . all the Amazon order email confirmations come to my account . . . after he left my other regular one outside in the charcoal grill . . . and I didn't have it to check the turkey for Thanksgiving. I will have to give it a try. I have a heart shaped Le Creuset casserole type baking dish . . . that I've never used . . . would this be an appropriate piece of cookware to use? It also has a lid. Cook and let sit with a lid OR without? Maybe I could try it for Valentine's Day. As I don't think either kid would like prime rib, daughter has gotten more picky and son has always been a very picky eater. So can you hear the thermometer going off in the oven or do you actually need to be in the same room to hear it since its in the oven?
My niece cooks the prime rib in a roasting pan, much like roasting a turkey. The thermometer I have used has a probe in the meat with a long wire attached to a magnetic reader that I stick on the oven door. When the temp hits where you program, it will beep loudly.The oven door will close on the wire. Good luck and Merry Christmas.
Thanks. I also checked the Le Creuset website and says they're casserole dishes are good UP to 500 degrees. I think I'll try one very soon. And the spicier or hotter the horseradish the better . . . husband would like that.

I'm with you raven....just trying to convince the rest of the family, and when I can't, I'll stay home and enjoy a once-a-year treat. I eat darn healthy 364 days a year!

We have a great butcher at an upscale market, his Prime Rib is the most top grade that can be had. It's my one splurge. He cuts it off the ribs and then ties it back together with butcher's twine. We did a lot of research on what was the best way to fix it and he was already onboard.
Horseradish sauce & an Au Jus sauce
Loaded potato casserole with cheddar, bacon & green onions
Black olives and watermelon pickles
Homemade cranberry sauce with Grand Marnier
Salad of fresh greens, dried orange cranberries (TJoe's), apple cubes, candied pecans, crumbled gorgonzola and sherry vinegar vinaigrette
Champagne
Princess Cake

My meal? Probably some brown rice along with a nice salad and a big glass of milk.

I suppose our menu is pretty boring. Good, but boring.
I have a KC ham, as usual, but I make my own glaze instead of using theirs.
Making (by his request) baked sweet potatoes. He, and I actually, likes the sweet potatoes either baked or mashed so I go with whichever one, du jour, that he chooses.
Then a veg - probably something uncomplicated. He said he'd be happy with just some of those mixed veg in a bag that you cook in the microwave. I'm cool with that. I'll see what strikes my fancy, tomorrow, when I go to the store.
For dessert, I'm not making anything this time. I got a Junior's Lemon Coconut Cheesecake (also at his request) that we both love. Can't wait to dig into that! So good.
The best thing, aside from the food, is that this will be a very easy, partial day, of cooking and clean up for me! yay

The potatoes are the cinchy part. I just bought the horseradish sauce-- Boar's Head Pub Style at the supermarket. Many of the horseradish sauces I saw contain HFCS and I wanted to have none of that. The Gold's I would have bought but it might be too spicy for some of us.
I also purchased Knorr Au Jus packet and will probably add some flour to it to thicken it slightly when I make it.
I've made roast beef in the past so this time it will be a little different.

I've changed our Christmas dinner almost totally to make it easier on everyone! Most of what' we'll have this year can be made ahead, just the meat and the salad to prepare Christmas Day.
