It is the easiest thing ever. I did my first one on Christmas Eve and I was terrified because my first try was on prime rib that cost over $100. I put it in a hot oven for an hour and then turned it off and let it sit in oven for one hour without peeking and it was PERFECT. Now I have a fancy digital thermometer that beeps when it reaches rare in the middle. When I take it out and let it rest it is a perfect med rare.
I "think" I'm getting a digital thermometer for Christmas . . . silly husband . . . all the Amazon order email confirmations come to my account . . . after he left my other regular one outside in the charcoal grill . . . and I didn't have it to check the turkey for Thanksgiving. I will have to give it a try. I have a heart shaped Le Creuset casserole type baking dish . . . that I've never used . . . would this be an appropriate piece of cookware to use? It also has a lid. Cook and let sit with a lid OR without? Maybe I could try it for Valentine's Day. As I don't think either kid would like prime rib, daughter has gotten more picky and son has always been a very picky eater. So can you hear the thermometer going off in the oven or do you actually need to be in the same room to hear it since its in the oven?
I just got a new digital thermometer at Aldis of all places. I was $6.99! I was thrilled. I have never tried in a that type of pan but I don't see why not. I put it in a regular metal pan (the one I do my turkey in). It has a little steeper sides than a cookie sheet but not by a whole lot. I think I put it at 500 degrees for one hour and then turn the oven off and leave it in there for one hour. I thought this recipe sounded absolutely nuts when I first read it but it got the best reviews so I gave it a shot and it turned out to be one of the best prime ribs I have ever had. I could take prime rib or leave it but my family loves it so I always make it. I do not cover it.
As for the thermometer, I usually stay around the kitchen. My living room is downstairs so I couldn't hear it if I went down there. I am usually getting other stuff ready in the kitchen anyway so it works out.

Prime Rib Christmas Eve with just the kids, spouses/significant others.. and Double Glazed Spiral Ham Christmas Day with a houseful lol

Nope...just confident anybody can do it. Don't overthink it; read the temperature guidelines and your first time around, under-estimate cooking time. You can always add on. Enjoy!!

Family history here for me....my folks worked hard to get both available, but the ham was saved for the "most guests" day to make entertaining more affordable in their day. I came from a Mom & Dad that always did the inviting and entertaining. Have a great time!
