I can relate to that! Last time I did a Prime Rib roast I thought I had it right (it's harder to do the whole thing med/med well!) and it totally wasn't. It was my fault for trying something new with it, that day.

We both like it the same so I ended up cutting two slices, taking a sauté pan with a little butter and just hitting them quickly in the hot pan to make them right. That probably sounds horrifying to some, but no likey raw meat. It ended up being very good!

Peachysue, use Yelp to see what restaurants are in your MIL's area. There are numerous ones that stay open.

Around here, it's traditional for my Jewish friends to go out for a movie and Chinese food on Christmas day. Think of the movie, "A Christmas Story," they had Chinese food also.

Glad I'm not the only one! One must do what one must do. Smiley Happy

What made it nice was that, with the leftover portions down the road, I could just slice some off and do the same thing, AND not end up with it too well done. So it worked out both ways.

When I take the roast out of the oven, I turn the oven temperature way up. I slice the ends off and put them back into the oven while the rest of the roast is resting. This is how I love my meat. It is not the least bit dry and I do not have to deal with the rest of my plate swimming in blood. (I am want of those an*al people who does not like my food touching)

When I watch cooking shows, particularly CHOPPED, I cannot believe how rare they serve most meat.{#emotions_dlg.scared}

What made it nice was that, with the leftover portions down the road, I could just slice some off and do the same thing, AND not end up with it too well done. So it worked out both ways.

It did, I was surprised. We had taken it out too soon, that was back in the days before we got the digital thermometer that you leave in the oven.

The outside piece or two was great and already cut. Instead of putting the entire thing back in the oven and trying again, I had DH cut it like a steak and I did the same thing you did.

Maybe later in the day, LOL but by then we'll be visiting my son- who has all the whoop de doo with his dad & family... it's like we are the outsiders, make sense?.... and my friend whose mom lives around the corner from my son, and they'll be with all their family... we just pop in and out... not much of Christmas for us to be honest- I sure miss all of that but it is what it is.
