HELP! Newly Adopted Cat Will Not Eat

How long will a cat go without eating? This is my first time with a cat. Can some of you cat experts give me some tips on some foods that might encourage her? It has been three days. She is drinking water--is active and seems healthy. Just got her this past Wednesday afternoon and she seems to be adjusting very well other than not eating. How long should I wait before consulting a vet?
