I am trying to get off wheat - and I've started to make my regular bread recipe using other flours that are gluten free - and also using Xanthan Gum in it - It's rising now, but I can tell the difference in kneading it - it's not going to be the nice, soft oatmeal bread it used to be.
So I am just wondering if anyone else here is off wheat - and can give me some pointers.
I tried googling - I'm not getting any results.
Oh I should say the reason we are experimenting getting off wheat is to see if we will still be so tired - as a friend pointed out. We've been off it for about a week and we did feel better, but I didn't bake the bread - we bought the gluten free last week.
I bet it's heavier - I do hope it rises.
