I watched someone explaining once how raw garlic has antibacterial properties when rubbed on a wound and then when it's cooked there are molecular changes and it takes on other medicinal properties. I forget what exactly, but it's only a Google away these days. I'm sure someone will look it up and share what I cant.

Just last night I made spaghetti aglio e olio for just me and my husband and I added about 12 large cloves of garlic (Goodfellas thin) sliced super thin and simmered that in olive oil with fresh parsley, a bit of starchy pasta water, pepper flakes and Parmesan cheese.

 

I eat it in so much. I made my own dressing and always put at least 5 or 6 large cloves minced in there. 

 

I don't like pre-minced garlic but I do buy a large bag of peeled garlic from Costco and go through one in about 1 1/2 month. Thankfully my husband likes it as much as I do! lol. We go through a ton of ginger too.

My mother always said that was her father's favorite dish and she'd make it for me.  Now Better-half makes it.  Simple and perfect.

 

Only one quibble: It's linguine for me!

Love garlic, but I try to keep in mind what I'm doing next.  If I'm working I shy away from it.  DH loves too so on weekends, we use with abandon!

Also grow garlic in the herb bed.   YUM YUMMY!

@hennypennyhi hennala, I'm with you.  If I don't use garlic in my cooking, something is missing. Ginger, onions and garlic are the three aromatics I can't live without!

Even if its only for  the healthy benefits  but also love how it enhances the flavor of foods.

My Mom is half Italian - I grew up eating garlic. I love it when used properly. HOWEVER - I find that in restaurants today they tend to use way too much of all seasoning and too much garlic becomes pungent. 

I use garlic appropriately - to compliment my food - not to be the overwhelming taste.

My DH says that he hates oregano. I cook with it all the time and he doesn't even know . Someone along the way in his life fed him something that was overspiced with it and now he thinks he hates it. It's all a matter of using it properly. Same with garlic IMO.
