I LOVE garlic so much and can't imagine food without it. I actually love LOTS of garlic and when I cook for myself, my husband, daughter and her husband we all love a ton of it. If others are eating with us, I won't go so heavy handed.
Just last night I made spaghetti aglio e olio for just me and my husband and I added about 12 large cloves of garlic (Goodfellas thin) sliced super thin and simmered that in olive oil with fresh parsley, a bit of starchy pasta water, pepper flakes and Parmesan cheese.
I eat it in so much. I made my own dressing and always put at least 5 or 6 large cloves minced in there.
I don't like pre-minced garlic but I do buy a large bag of peeled garlic from Costco and go through one in about 1 1/2 month. Thankfully my husband likes it as much as I do! lol. We go through a ton of ginger too.

My mother always said that was her father's favorite dish and she'd make it for me. Now Better-half makes it. Simple and perfect.
Only one quibble: It's linguine for me!

You are lucky that with Crohn's Disease you can still eat it. I have a few relatives with Crohn's that get very sick if they eat garlic or onions.
People on a Fodmap diet are also told to remove it from their diet. It can really play with their digestive system.

I love this too @just bee and I eat this often. I love how simple it is and so good. I used linguine last night too. I love Cipriani brand pasta but it is so expensive but they had a sale a week or so ago so I picked up a lot of it and I also love this dish with their tagliarelle pasta. Delish!

I did get lucky @Trinity11 because I do know other Crohns patients who can't eat it. I actually love hot food and peppers and I can still eat those too thankfully! There are other things that really bother me though but thankfully not stuff I really love. I asked my dr if I should stop even though it doesn't bother me and she said if they aren't bothering me it is ok to keep them in especially since garlic is good for you. I would die if I had to give up garlic!! lol!

Garlic is supposed to be so very healthy for you and I know quite a few people out here that include it in their diet everyday but I can't stand the taste and I've tried roasted. I do like onions...all types. There's a whole grain snack cracker sold at Whole Foods that contains garlic and that's the only time I eat it now.

Haaaa, omg, people tell me that they've never heard of such a thing, because I am the exact same way as you!
Now I don't feel so weird.
