I roast, peel and freeze at least 10 pounds of those puppies every year! I LOVE THEM! Hatch chiles!!!! CANNOT be beat!

Oklahoma: BEEF! Pecan pie, peanuts, native pecans (the best you will ever eat and they are tiny and hard to pick out--crisp and nutty not like most commercial pecans that have a soft texture), watermelons, kolaches (Czech population!), bbq, pinto beans and cornbread, and BLACKBERRY cobbler! Oh and fried pies are pretty popular too--a blast from the past!
I associate Alabama and Mississippi with caramel cake. I simply can't be along with a caramel cake! The old fashioned ones with icing made in a cast iron skillet your grandma had.

Tansy, Pho is the ultimate comfort food, like chicken soup! My oldest brother is Vietnamese-French-American and my mom made sure he had foods he was used to. We have several excellent Pho restaurants and we do take away several times a month. My kids love it and we always order a pork, chicken and vegetarian pho. It's so good it's difficult to have a favorite.
