Hey Tink!  That's what I do.  I put in there - onion, celery, lemon,  and fresh rosemary, thyme, sage, and a couple of bay leaves.  

 

That formula seems to work for me.  Smiley Happy

We stuff the turkey.....then remove the stuffing when the bird is done and transfer it to a baking dish.    Then "cook" it again till crispy on top.

I was watching The Chew yesterday, and they were talking about this.  Michael Simon said that if you prefer to stuff the turkey to put the stuffing in cheese cloth and then put it in the turkey.  When the turkey is done it's easy to take out when it's in the cheese cloth.  Then put it in a baking dish and cook it the rest of the way until it's at the proper temperature, which he said was 165 degrees.

Simply because one hasn't gotten sick from eating dressing from a turkey doesn't mean one can't. Food-borne illnesses are on the rise, mainly because of how our food is being raised. It's just not the same as it was when I was growing up. 

 

It's not just blood that may harbor bacteria. And think about it: if the juices from the turkey didn't get into the stuffing, why would it taste better when cooked inside the turkey? 

 

I, too, prefer the taste of dressing that's been stuffed into the bird. So I do as another poster: once the turkey is done, I scoop out the dressing and continue to cook it until it's reached a safe temperature.

@TaxyLady I always put the stuffing in right before I cook it.  I also scald the inside and put salt around the inside of it.  

 

Always be sure to remove the stuffing as soon as the turkey has set for a short time, never leave it in the turkey.

 

Here's a turkey tip a friend who is a chef at a famous restaurant in Middleburg Va taught me.  Separate the skin with the bird (slice under it).  I insert slices of REAL butter. This will melt down over the bird.

 

He used to come to the beach and cook our meals.  He once said, "You know why meals taste so good at restaurants?  It's because we use real butter and salt and don't worry about it".  It's OK to eat as long as you don't eat it every day".

 

Works for me!

Hi Lotus -   That's exactly what the chefs suggested on "The Chew" recently.

 

Remove the stuffing when the turkey is done cooking and while it's tented and resting for 30 min., transfer the stuffing to a baking dish and into the oven .

 

That will be certain to bring the stuffing up to it's safe temperature and also crisp the top.   If you don't like crispy top, just put foil over the baking dish.

If you deep fry a turkey, you can't stuff it.  That's the only way I've ever cooked a turkey.

 

My family does both. They put stuffing inside for those that want it that way and they cook a pan outside for those that want it that way.  I prefer the texture of it from outside the bird.

Fried turkey, for me, is as moist as my usual way, which is to coat with a flour paste and brown first @450. It seals in the juices.
