I am doing Cornish Hens...5...and stuffing them lightly with wild rice...Should I scald them first also?

Wildflowers, I am doing same this year and stuff them and put in oven after stuffing.  I have never scalded them or Turkey and no problem.   You do what is comfortable for you.

Well said, Tink!   I'm not afraid either.  I just think it's gross so, clearly, it just doesn't appeal to me.  Big deal.  We all like different stuff.     To say that it's not as good if it's not stuffed is also a bit of an over-step.

Yes, I scald all poultry.

@qvcaddition...Yes, they are delicious!...I've never scalded them before but, after hearing so much about how it is not good to put the stuffing in poultry,  I've become somewhat neurotic and am not sure anymore what is more comfortable for me!...LOL

I guess I'm with the "ignorance is bliss" crowd. I've stuffed turkeys with hot dressing, after rinsing the cavity, for years. Haven't made anyone sick yet! And I don't have to worry about my little bird tomorrow since I'm just cooking for my older brother and me and we're both gluten free, thus no stuffing!

My grandmother was an AMAZING cook but one year she just stopped stuffing the turkey.  

 

Since then, she filled the cavity with seasoning items ..... roughly chopped onions, chopped garlic, rosemary, and, a couple times, a lemon or orange.   The smell when cooking was unbelievable!

I don't think we need to split hairs over this. It's Thanksgiving, give thanks we even have Community Chat and the other forums, it sure doesn't bother  me , and I hope you didn't get too upset.

 

BTW, never heard of this, but makes sense to me. Happy Thanksgiving!
