Also known as Shakshuka.  My daughter loves it.

@CelticCrafter Sounds like it has Mediterranean origins

Eggs in Purgatory Shakshuka, Eggs Diablo..all versions of the same meal.  A simple prep yet so many versions to suite anyone's taste..  Google and find one that floats your boat.  Its a yummy departure from the same old same old!

I've never heard it called this, but, yes it is a thing.  Being Italian, we made meatless spaghetti sauce a lot on no meat Fridays.  When it was almost done, we would crack eggs in it, just like when you poach an egg.

This was for protein.  We let them get done like a hard boiled egg so the yolk wouldn't run all over.  It was really good.  Didn't bother the taste of the sauce and the eggs tasted like eggs w/a little more flavor Smiley Happy

On farms, many times tomatoes were served with an eggs and bacon/sausage/or small chop for breakfast.

Not my taste though.

@Ladybug724  I have heard of it.  I've also heard it called Shakshuka (I think). It's an Israeli dish with heavy influences from Morocco and Northern Africa.   Kind of spicy, tomato-y and silky at the same time.  I have a recipe for it that I've been meaning to try.  It looks awesome paired with some crusty bread.

Now I'm hungry.

Not so different from someone putting salsa on their eggs.
Or eating huevos rancheros.
I’ll eat that any day over ketchup and eggs.
