I keep saltines on hand always...must be Nabisco Premium Original. I also have Ritz Garlic Butter crackers...those things are heaven with peanut butter (Jiff Extra Crunchy) on them! I don't do that often, but sometimes when I don't feel like cooking or I'm eating dinner alone, that combo just hits the spot!

I am crazy for Blue Diamond's Nut Thin crackers.  Some are labeled, "Artisan," and there are numerous flavors.  They come in a small quantity-sized box, and are VERY (embarassingly) easy to eat in one day.  But they're healthier than regular crackers, so I never feel very guilty.  ;-)  I can't buy them too often, though, as they're not cheap.  However, a treat every now and then is good.  These are SO addicting!

I like to eat egg salad, tuna salad and salmon salad with wheat thins instead of bread.  

 

I love the crackers Trader Joe's carries with the fig - cannot think of name.  Great for soft cheese.

 

I like the flavored Triscuits.  

 

If I am going to make a cheese plate I use fancier crackers.  

 

I am going to look for the Keebler White Cheddar  Sounds good.

I love Keebler Toasteds in the variety pack of three. There are great with cheeses. DH loves Zesta Saltines, but I prefer oyster crackers for soups and chili. Ritz is my preference for peanut butter.

          Well, @tansy, I moved not long ago and have to admit I haven't unearthed everything packed away.    I'm not much of a cook, but I follow recipes fairly well!    I asked my sister, and this is her version which probably mirrors the one I use.   It's called a "macaroon pie," and the interesting thing is that usually people can't identify the ingredients when they taste it.   People used to go to the locally-owned restaurant just for the pie!   The family closed it recently...  very sad for the community.

 

15 dates chopped fine (app 4 oz, 1/2 cup)

1/2 cup pecans, chopped

15 Ritz crackers

3 egg whites

1 cup sugar

1 tsp almond extract

Whipped cream

Cherries

 

Chop dates.  Roll crackers to make crumbs.  Mix with sugar and nuts.  Beat egg whites until stiff and add almond extract.  Fold into date, crumbs, sugar, nut mixture.  Pour into greased pie or cake pan and bake 45 minutes at 300 degrees (or 25 to 30 minutes at 350).  Pie should set, but do not overbake -- may sink a bit in the center after cooling.  Serve warm or at room temperature with whipped cream and top with a cherry.  Most other recipes for this call for 1/4 tsp baking powder mixed in with crumb mixture.  I've tried it both ways and think it does hold together better with the baking powder.  Freezes well.
