Wonderful cook and self-made man; may he rest in peace. I love Cajun food.

 

I used to wish he hadn't made blackened food so popular (I don't like my seasonings encrusted around a food--too harsh for me.). 

 

From the obit posted by Pearley, he felt the same way!
