That's OK.  I'll stick with mashed potatoes.

I keep reading diet menus that say to make cauliflower & mash it as a potato sub - UGGG - I am not a fan of cauliflower, and it certainly doesn't taste anything at all like potatoes.Just because they are both white - that is all they have in common. No but lots of Parmesan and butter can make anything taste good except Kale.

Actually the idea is to replace potatoes with cauliflower as a side. Mashed potatoes  are not fattening it's the butter and cream that does it in.

Re: Cauliflower as a potato substitute.

I love potatoes but I try not to eat too many. I roast cauliflower with sliced red onions and a little lemon garlic powder. My favorite way to cook caul. is rice it in viramix, sauté with olive oil then add a little butter and Frank's Hot Sauce. My husband goes crazy for it. You would never know your eating cauliflower.

It came about for those that are wanting to cut down or eliminate carbs or starches.  You can buy cauliflower rice in the freezer section, same principle.  I like potatoes, rice and cauliflower.

I buy the cauliflower rice in the produce section.  It works very well.

I love cauliflower and I'm not that big of a fan of potatoes. I don't like mashed potatoes.

You could always try subbing part of the potatoes with cauliflower to cut some of the carbs without sacrificing all potato taste.  Should help with your blood sugars and weight loss endeavors.

I do not care for cauliflower either but I also do not eat potatoes (just the occasional yam).

Re: Cauliflower as a potato substitute.

Green Giant has a mashed cauliflower with cheddar and bacon that's really good -- the plain is too.

They also have broccoli tots which are very good as well. I wasn't sure about the tots but was nicely surprised by them.
