These are what we always used to make and put on a tray for friends etc.(picture at bottom) I will follow with the other two items we always had on the tray:
Buckeyes:
3 pounds powdered sugar
1 pound butter
2 pound jar peanut butter
12 ounce semi sweet chocolate chips
Combine first three ingredients. Mixture will be very stiff. Roll into small balls. Melt the chocolate in double boiler over hot water. Dip the peanut butter balls into the chocolate leaving a round circle not covered in chocolate. You can use a candy fork to do this or a toothpick. Yield approx 340.
*notes: by the time you get to numbers 300-40 our buckeyes tended to get very large
I would think you could use candy melting chocolate instead of the choc chips if you prefer
We used to melt a bar of paraffin in with the chocolate chips to make the candies "shiny" but I don't think that was found to be food safe.
