Re: 8 Passover Desserts For A Sweet Seder

Noel. I sure hope New Leaf comes to Santa Barbara. We shop every week at the local farmer's mkt and a small chain store called Gelson's. We have a whole foods but I must say I am not a huge fan.

I've made the chocolate meringues but using cocoa powder and semi sweet chocolate mini chips inside. I have also made them mocha flavored using a Tsp. of instant coffee melted in a teaspoon of vanilla extract. I made them once using coffee extract but the instant coffee was strong coffee tasting so back I went to using instant coffee again.

Is it basically like a meringue cookie?

Yes it is, Noel. I can post the recipe if you'd like it.

Post the recipe! I am waiting, sounds so good. It is a little soft inside?

Yes, if done right, the inside is chewy and the outside is harder. The chips magically find their way inside each cookie while it cooks! Smiley Very Happy

Chocolate Flavored Meringues

Ingredients

4 egg whites, 1 hour at room temperature-- 1/4 Tsp. cream of tartar-- dash of salt-- 1/2 Tsp. vanilla extract-- 1 Cup sugar-- 3 Tbsps. unsweetened cocoa powder-- 6 Ozs. (3/4 Cup) mini or regular semi-sweet chocolate chips

Method

1) Preheat oven to 275 degrees. Line 2 cookie sheets with foil or parchment paper.

2) In a glass mixing bowl, using an electric mixer beat egg whites with cream of tartar, salt, vanilla extract & cocoa powder until soft peaks form.

3) Add sugar gradually and beat until stiff peaks form.

4) By hand, add chocolate chips.

5) Drop by rounded teaspoonfuls onto cookie sheets. Bake for 30 minutes.

6) Remove from foil/paper to a wire rack to cool completely. Store when cooled in an air tight container.

Yield: approx. 55 small or 36 large cookies depending on how rounded the teaspoon is.

Mocha Meringues

1) Dissolve 1 1/2 Tsps. of instant coffee into 1 1/2 Tsps. vanilla extract. Add at step 2 above.

Chocolate Orange Flavored Meringues

1) Substitute orange extract for vanilla extract. Add 1 Tbsp. orange zest at step 2 above.

Toffee Meringues

1) Substitute chocolate chips with 1/2 Cup milk chocolate toffee bits or toffee bits at step 4 above.

Hi henny, I'm not a big fan of WF, either. There are two I know of in this area, one has basically no parking and is on a busy street, and the other is also not easy to get to. It becomes a chore.

What I'd really like is a Wegmans {#emotions_dlg.thumbup1}

Funny story about this recipe-- the cookies were made by someone for a PTA honor the teachers luncheon and a few of us loved these cookies. My Mom never made cookies so this was an unusual treat. The woman REFUSED to give us the recipe!! I finally searched on the internet and found one I could do and this was the one.

Re: 8 Passover Desserts For A Sweet Seder

I've made all the versions listed at different times. Be sure to not make them on a humid or rainy day-- the meringues do not get as high or rise on days with lots of moisture in the air.

I save the yolks for when I make Swedish meatballs. I usually do both recipes concurrently.
