Slow cooker Split Pea with Ham Soup

It IS easy being green! This is so yummy and sooooo easy.  I needed some comfort food and I didn't want to spend the entire day in the kitchen so...slow cooker to the rescue.

Slow Cooker Split Pea with Ham Soup

1 bag green split peas

1 cup diced ham

1 cup chopped celery

1 small onion chopped

1 cup chopped carrots

32 oz. chicken stock

1 -2 garlic cloves, sliced

1/2 tsp. Cayenne pepper (more or less, to taste)

1/2 tsp salt

1 bay leaf

2 sprigs fresh thyme

 

Dump all ingredients into the slow cooker, stir.  Set it for 4 hrs.  Remove the bay leaf and thyme sprigs before serving.  It is so thick and hearty served with a crusty piece of bread!
