Slow Cooker Beer- Braised Pork Chops on Wednesday; FFANY on Thursday!

Hello, foodies…

 

I was out running some errands today and went past a Halloween store…WOW, was it mobbed. I think half of my town woke up this morning and realized it was October 19. Halloween is less than two weeks away! I know how trick-or-treaters feel at this time of year...I thought Halloween would never come. I felt like we were always waiting for the day to arrive when we could take our pillowcases (remember that???) and go collect all the candy we could hold. Now, the holiday is here and gone in record time.

 

Anyway, we’ve still got some time to get that slow cooker up and running before the month ends and Wednesday’s recipe is sure to be popular with the fam: Slow Cooker Beer-Braised Pork Chops.

 

 

Slow Cooker Beer-Braised Pork Chops

Serves 6

Ingredients:

  • 1/4 cup oil
  • 6 (8-oz) bone-in pork chops
  • 4 cups sliced onions
  • 2 cloves garlic, thinly sliced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary leaves
  • 1 (12-oz) bottle of beer
  • Zest and juice of 1 lemon
  • 2 Tbsp whole grain mustard
  • 1/2 cup chicken stock
  • 2 Tbsp flour
  • 1 tsp salt, plus more for seasoning pork chops
  • 1/2 tsp black pepper, plus more for seasoning pork chops

Preparation:

  1. Season both sides of the pork chops with salt and pepper.
  2. Heat the oil in a large skillet on medium-high heat. Brown the pork chops and place them in the slow cooker. Add the onion and garlic to the skillet and sauté until the onions begin to soften, about 5 minutes. Turn off the heat and add the thyme, rosemary, beer, lemon zest, lemon juice, mustard, salt, and pepper to the pan.
  3. Stir together the chicken stock and flour in a measuring cup until there are no lumps. Stir the chicken stock mixture into the pan with the onions. Pour the contents of the pan over the pork chops. Put the lid on the slow cooker and cook on high for 3 hours.
