Simple Easter Dessert - Marshmallow Bunny Ear Cupcakes!

by on ‎04-07-2017 12:00 AM

Many of you know I love to bake & craft & scrapbook. I love to make an impact with all of my creations. But I also love things that are easy & deliver a visual punch.  When I saw this while scanning through images on Pinterest, I said, I have got to make these!!

Bunny Ear cupcakes

Here is the easy part—you can choose to make the cupcakes homemade, use boxed cupcakes, or even buy them at your local store already made.  I chose Betty Crocker Extra Moist French Vanilla mix for these.  Then choose or make your favorite frosting, I chose Pillsbury white frosting-yes in the can!!

You will want to purchase pink sugar & marshmallows, and you can even add coconut if you like.

Cut the marshmallows in half on the diagonal.

Then place the pink sugar in a bowl & dip the sticky ends of the marshmallow into the sugar.

Now you can have a plateful of bunny ears!!

Take your frosted cupcakes & add the ears, and that is all you have to do!!  If you want to create a little more fun, also use coconut for a garnish.
