Pressure Cooker Smoked Sausage & Potato Soup

I will be Cooking with Chef Meredith at noon today I hope you will join us.  Here is a new pressure cooker soup recipe I came up with for the soup lovers out there #soup #good #eats

 

Pressure Cooker Smoked Sausage & Potato Soup

1 lb. smoked sausage, cut in bite sized pieces (I used smoked turkey)

4 potatoes, cut into bite sized pieces

1 small onion, chopped

2 celery stalks, chopped

3 cloves garlic, minced

2 cups fresh spinach, chopped

1 cup chopped mushrooms

1 carton chicken stock 32 oz.

1/2 cup lite cream

1 TB butter

1/2 tsp dried Thyme

1/2 tsp Paprika

Salt & Pepper to taste

Set pressure cooker to brown/sauté. Add butter, onions & celery, season with salt & pepper.  Cook until softened. Add sausage, mushrooms, garlic, Thyme & Paprika, stir and simmer for a few minutes.  Add potatoes, chicken stock, cream, spinach and a dash more salt & pepper, stir.  Lock the lid, set pressure cooker for 8 minutes.  Let the pressure release naturally.
