Pressure Cooker - Pork Chops & Apples

The chilly fall weather inspired me to make some delicious dinners in my pressure cooker over the weekend! One of our family favorites is the pork chops and apples... I substitute cooking sherry in mine and serve with couscous. We also love paprika chicken too! I learned to use a pressure cooker a few years ago and love learning new recipes...Do you have a favorite fall meal in the pressure cooker? Enjoy dinner!

Pork Chops & Apples

 

Ingredients:

1 tbsp. vegetable oil

4 pork loin chops (1” thick)

½ red onion (diced)

2 large apples, peeled, cored and cut into wedges

1/2 cup dry sherry

½ tsp. chicken base

1 tbsp. butter

1 tbsp. brown sugar

¼ tsp cinnamon

Salt & pepper to taste

 

Add oil to the pressure cooker and heat on high or brown with the lid off until sizzling, add pork chops and onion. Saute until chops are lightly brown on both sides.  Cover with the remaining ingredients, securely locking on the pressure cooker lid, set the cooker to high and cook for 14 minutes.  Perform a quick release to release the cooker’s pressure.  Safely remove lid, then salt and pepper to taste.
