Potluck Chicken Casserole

Last week we were eating pasta salad, deviled eggs and drinking iced tea because the weather was so nice and warm…this week winter came back so I went back to comfort food with what I am calling Potluck Chicken Casserole.  I could also call this, “too lazy to go to the grocery store casserole”.  I literally went to the fridge & pantry and grabbed what was left.  2 leftover chicken breast, spinach, carrots, onion, mushrooms, cheese & 1 can of cream of broccoli soup and tadaaa!!! Dinner is served

Potluck Chicken Casserole

 

2 cups cooked chicken breast, chopped

1 onion, chopped

1 package fresh spinach, chopped

1 can mushrooms

1 cup carrots, chopped

1 cup cherry tomatoes, sliced

1 can cream of broccoli soup

1/2 cup water

1 cup shredded cheese

1/2 cup breadcrumbs

olive oil

2 cloves garlic, minced

 

Preheat oven to 350 degrees.  Saute garlic, onions, carrots in olive oil until softened.  Add spinach, mushrooms and tomatoes, saute for another 5 minutes until spinach wilts.  Remove from heat.  Stir in soup and water.  Pour everything into a 8x8 casserole dish.  Top with shredded cheese and breadcrumbs.  Bake for 35 - 40 minutes until hot and bubbly
