The below is inspired by David Venable's waffle recipe, complete with a few Foodie File tweaks!

Waffles

Makes 4 Triangle-Shaped Waffle Sandwiches

Ingredients:

2 cups all-purpose baking mix

1 Tbsp sugar

1 cup milk

1-1/2 tsp vanilla extract

Filling:

Peanut butter; enough for four waffle sandwiches to your liking

Grape Jelly; enough for four waffle sandwiches to your liking

Powdered sugar; to sprinkle on top

Preparation:

1. Preheat an electric waffle maker according to the manufacturer’s directions.

2. In a medium-size mixing bowl, combine the baking mix and sugar. Stir in the milk and vanilla extract. Use this batter to make 2 waffles according to the manufacturer’s directions.

3. Let the waffles cool, then cut each waffle into 4s. You will be left with 8 triangle-shaped sections total.

4. Spread layer of peanut butter and grape jelly on each triangle-shaped section to your liking. Then, bring 2 triangle sections together to make a waffle sandwich.

5. Sprinkle with powdered sugar on top and enjoy!
