Oh, Christmas Treat, Oh Christmas Treat...How Lovely Is a Mint Chocolate Chip Ice Cream Pie!?

Hello, foodies…

 

I’m having a wonderful vacation and from what I hear, you all had lots of fun on Sunday with Jane Treacy. I’m so glad! This Wednesday is July 1, which means we’re kicking off a brand-new theme on In the Kitchen with David: Oh Christmas Treat!! I know what you’re thinking…Christmas? What?! Well, QVC celebrates Christmas in July® so we thought it would be fun to bring you Christmas-y treats…on ice. After all, it is summertime!

 

Our first “Oh Christmas Treat” is minty, chocolaty, and awesome. Mint Chocolate Chip Ice Cream Pie!

Mint Chocolate Chip Ice Cream Pie

Serves 10-12

 

This recipe is prepared with the Le Creuset 6-Piece Revolution Utensil Set (K300602).

Ingredients:

  • 1 (6-oz) ready-to-use Oreo pie crust
  • 1 (1-1/2 gallon) container mint chocolate chip ice cream, slightly softened
  • 1-1/4 cups roughly crushed chocolate wafers
  • 4 oz whipped topping
  • 8 chocolate wafers, halved (optional garnish)
  • Chocolate fudge sauce (optional garnish)

 

Preparation:

  1. Freeze the pie shell for 1 hour. Evenly spread 1/3 of the ice cream onto the pie crust. Place the crushed wafers over the ice cream layer. Lightly cover with plastic wrap and freeze for 2 hours.
  2. Using a spatula, spread the remaining ice cream over the crushed wafers and gently spread until even. Lightly cover with plastic wrap and freeze for 8 hours, or overnight.
  3. Pipe whipped topping around the border of the pie, if desired, and garnish with the halved wafers and chocolate sauce. Let the pie rest at room temperature for a few minutes before serving.

 

As I said, this is a great make-ahead recipe. But don’t be tempted to decorate it ahead of time. It’s almost impossible to cover the pie without smooshing the whipped cream. If, on party day, you don’t have time to use a pastry bag, simply spread the topping over the pie and garnish it with cookie crumbs before serving.
