Wrapping up my latest clean eating obsession for #MasonJarMania and threw together all my recipes from this month in one place for you. I hope you enjoy!
Blueberry Peach Parfait
Layer the following:
2 tbsp cooked and cooled quinoa
2 tbsp fat-free yogurt
2 tbsp blueberries
3 peach slices
Sprinkle of chopped almonds
Drizzle of agave syrup
Repeat the layers and dive in!
Caprese Salad Jar
2 cups arugula
handful basil leaves
1/2 cup cherry tomatoes halved
mozzarella balls
balsamic vinaigrette
Layer and go!
Overnight Banana "Bread" in a jar
1 banana (mash half)
1/3 cup oats
1/4 cup plain yogurt (I used fat free)
1/2 cup almond or milk of choice
1 tbsp chia seeds
1/2 tsp cinnamon
honey to taste
pecans for garnish
Mix all but the pecans and half of the banana and refrigerate overnight. Top with sliced banana, pecans, and a drizzle of honey and enjoy!
Chopped Chicken Salad
Layer:
Vinaigrette of choice; I simply combined olive oil and balsamic vinegar (layer this on the bottom and do not shake if you want to store a bit before eating!)
Roasted red peppers
Cherry tomatoes, halved
Broccoli florets
Chopped grilled chicken
Cabbage slaw
Lettuce of choice
Not-So-Mean Green Juice
Make a big batch of these on Sunday and have your fancy green juice all week… no juice-cafe trip required!
2 cups spinach
2 cups water
Juice of one lime
One carrot
Two small cored apples
Small handful parsley
1/2 inch piece ginger
2 stalks celery
Blend for at least two minutes until it’s liquified!
Fruit Crumble Jars
This ones for cheat day! Enjoy!
2 cups assorted berries
Tsp cinnamon
3/4 cup sugar
1 Cup oats
1 Cup flour
Tsp vanilla
1 stick butter
Preheat oven to 350. Use a fork to incorporate the butter, flour, oats, and half of the cinnamon and sugar together until it has a crumbly texture. Mix remaining ingredients in a separate bowl. In small jars begin with a layer of crumble mixture and alternate with berries until you reach the top of the jar. Bake for 30 min.
Chicken and Vegetable Jar Soup
Layer:
handful of zucchini noodles
1/4 cup canned kidney beans
cooked, chopped chicken
1/4 cup frozen mixed vegetables
2 tbsp. tomato sauce
When you're ready to eat, just add hot water or chicken broth and shake!
Chocolate Chia Pudding
Warning: addictive!
tablespoon chia seeds
tablespoon cocoa powder
3/4 cup almond milk (I actually ran out and added a couple splashes coconut water...and loved it)
3 pitted dates
pinch each of cinnamon and salt
splash of vanilla
Blend all of the above and chill for at least three hours. Top with whipped cream and berries if you like and dive in!
Dressed-up Fruit Salad
Layer frozen or fresh fruit of your choice..if frozen, leave out and it'll be ready by lunchtime! Skip the vending-machine dessert! I used strawberries, peaches, blueberries, pineapples and mango. In a separate container mix:
tbsp. honey
teaspoon olive oil
1/2 teaspoon vinegar
juice of one lime wedge
Mix the dressing right before you add just a drizzle to the jar. Shake and enjoy!
